For PTFC Cafe, she shares one of her favorite recipes for "Chicken" Satay Skewers with Peanut Sauce.


"Chicken" Satay Skewers with Peanut Sauce


Ingredients


Can of coconut milk


Package of No Evil Comrade Cluck “Chicken”
OR
Chicken thighs


Red curry powder Sugar
Salt
Red curry paste Natural peanut butter Soy sauce
Apple cider vinegar Lime
Cilantro
English cucumbers


Instructions


Combine the 1/4 cup coconut milk, 1 tablespoon curry powder, 1/2 teaspoon sugar, 2 tablespoons curry paste, 1 tablespoon salt in a container. Marinate chicken for at least 20 minutes.


For peanut sauce combine remaining coconut milk, 2 tablespoons curry paste, 3/4 cup sugar, soy sauce, 1 teaspoon salt, vinegar and 1/2 - 3/4 cup of water and simmer on low heat for 5 minutes.


Skew protein onto skewers—if you’re using plant protein, it should already be in pieces. You can also baste skewers while cooking! Do not do this if using animal protein. Cook skewers over the BBQ (recommended) or in a large pan on the stove.


Serve with chopped cucumbers to dip in peanut sauce or with jasmine rice. Garnish with lime and cilantro. Enjoy!
